Mexican Chocolate Mousse

Have you ever had a Mexican hot chocolate? They’re delicious! It’s a dark, rich, warm chocolate with cinnamon and cayenne that add a depth of flavor that makes it something really special. This dessert tastes like if that drink was a healthy chocolate mousse.

Roasted Garlic + Cauliflower Soup

I’m going to address the elephant in the room: It’s pretty near impossible to get cauliflower soup to look sexy in a picture. It just is.

Ok now that’s out of the way, please don’t let its drab appearance put you off from making it – it honestly is delicious!

Banana Bread Pudding

Have you ever craved dessert but were too lazy to go to the store, so you threw together some random ingredients you already had in your kitchen and crossed your fingers that it turned out edible? Welcome to every weekend at my house.

Red Pepper + Artichoke Dip

For this appetizer, I took three of my favorite things: red peppers, artichoke hearts, and leeks, and turned them into a delicious dip that’s a little savory, a little tangy, a little salty, and a lot amazing.

It’s delicious served room temp or cold, and it’s the perfect app for pretty much any occasion any time of year.

3 Ingredient Banana Fudge Popsicles

It’s been a long time since I’ve seen an ice cream truck anywhere, let alone eaten a banana fudge bomb pop. But for some reason, I started thinking about them a couple weeks ago, and haven’t been able to get them out of my head!

So I set about trying to recreate a healthy version of my favorite childhood treat. It was actually a lot easier than I thought it would be and they turned out really yummy!

Greek Potato Salad

This potato salad is anything but traditional. Instead of a heavy mayo-based dressing, I’ve swapped it out for a light and bright red wine vinegar dressing that is zesty and delicious. Parsley and green onions add a much-needed fresh note that I find is missing from most potato salads. And Kalamata olives and feta cheese make it deliciously rich and salty.

Pork Fried [Cauliflower] Rice

I’ll be honest, this is probably the least authentic fried rice you’ll ever have, but it’s still delicious.

Best of all, it comes together incredibly quickly, cooking for less than 15 minutes. This makes it a clear weeknight winner in my house.

I subbed regular rice for cauliflower rice, which I absolutely love. It’s really easy to make yourself, either with a box grater or a food processor. Or if you’re lazy like me, you can pick up a bag of pre-riced cauliflower in the freezer section of your grocery store.

Rosemary + Turmeric Spiced Nuts

These roasted nuts actually have a ton of spices in them, but calling them “Rosemary + Turmeric + Ginger + Cumin + Cinnamon + a bunch of other spices Spiced Nuts” seemed a little aggressive.

If it’s still cold and rainy where you are, these the snack for you. They’re full of warming spices + healthy fats, and are the perfect cozy snack for a movie night.

Instant Pot Butternut Squash Chili

No doubt about it, it’s chili weather. While being cold is not one of my favorite things, I always welcome the opportunity to cozy up with a bowl of something warm and hearty.

This chili isn’t exactly traditional. There are no beans (which I think Texans would approve of), but there is butternut squash and cacao (which I’m pretty sure Texans would not approve of). Either way, it’s delicious.
